Well I don't know much about BBQing, but I smoke a mean brisket. You don't have to have a smoker. You can smoke on a grill as long as you have container for wood chips and a grill large enough so that you can put the meat over a section without direct heat. If you're on not go to the lounge and we can talk. Otherwise just let me know if you want to try to smoke on a grill.
I love seafood or a lamb roast on a bbq... but here's a yummy tip for the chilli-lovers among us. Chilli-poppers! Grab a bunch of juicy green FRESH jalapenos, cut along one side, scoop out the flesh and fill with a mix of chopped up fresh King prawns (Shrimp) and butter or soft cheese. Grab two bambo skewers, and hold side by side, and slide/thread on the chillies horizontally, sort of like a bambo 'ladder' with chilli 'steps'. The skewers help hold the filling in place, then place the chilli 'ladder' across either the grill or the hotplate. When the green chilli flesh goes limp/soft, they are ready to eat with an icy cold beer or glass of wine. Spicy Cajun style 'blackened' fish or a simple grilled (red) salmon cutlet is also great with a fresh salad and alcoholic beverages that wisely include frozen margaritas.
