Who has the best BBQ?

    This is a topic that many people won't be familiar with but I decided to lay it out there anyway because American Independence Day is on Friday. There is a long tradition of BBQing in the Americas that goes back (as far as I know) to the native peoples of the Carribean and their love of 'barbacoa.'

    Many enthusiasts have a strong opinion on what they prefer but they all agree that grilling is NOT barbecuing....anything over direct heat....isn't BBQing. Slow and low (heat) is the only true way to do it.

    The pulled pork of the Carolinas....the dry rubbed ribs of Memphis....the combo of African American, German, Czech and Mexican influences on Texas BBQ and the sweet & spicy sauces of Memphis/St. Louis......each of these places has their own style.

    What type of 'Q' do y'all like???

    Oh you know in Germany BBQ parties are usually quite boring. This is 1 think that i like better in the US.
    My bf is from Memphis,Ten. Currently in Iraq so we cannot spend Independance Day together but we can make an after-party when he is back.
    :) I have no clue who got the best BBQ but i am listening'reading :)

    ChosenOne, please tell me that there aren't people that actually consider grilling to be a form of barbecuing. If they do, they obviously haven't been to the South. lol Personally, I would have to go with Memphis style with a sweet, wet sauce. Unfortunately, I won't be doing BBQ on the 4th. :( My family always has a big fish fry, which is good too, but I'm in the mood for BBQ.

    How do you like brisket? My friend's husband is from Texas, and he fixed some for us. It wasn't bad but it was a little tough for my liking. I didn't know if it was the cook or the meat. lol

    Most people I know that are objective say Memphis or K.C. is the best...so I guess you aren't alone on that one.

    Buffalo fish and catfish are great....always gotta have some hush puppies & hot sauce to make it go



    That's the biggest complaint that I've heard from acquaintances/friends that aren't from Texas who eat Texas-style BBQ. Beef is definitely tougher to chew but you're right........it all depends on the cook. If it's done right....the brisket can be delicious and easy on the chops. Personally chopped beef and hot links along with some potato salad, greens and cornbread always hits the spot.

    Earl Campbell (former U of Texas football star, NFL Hall of famer)...has a line of hot links that put most other sausages to shame....many people love to BBQ those along with some chicken to keep it simple.

    I'm from North Carolina and on the eastern part of the state people are serious of their barbecue. Where is the German influence in Texas beef barbecue?

    The beef is mostly a Mexican influence but German and Czech settlers came to Texas in the 1800's and brought a wide array of sausages and quality beer that's often served with the food including Shiner's Bock from the Spoetzl Brewery.


    Basically....

    Panhandle = like Kansas, Nebraska or Oklahoma (Amarillo)

    West = Desert...truly like another country...strong ranching roots (El Paso)

    South = "The Valley"....Northern Mexico (San Antonio)

    Central = Strong German & Czech influence (Austin)

    Southeast/East = Some parts urban...other parts are "Deep South"....(Jasper is deep south....Houston is urban)....very diverse...mostly black or Scots Irish roots along with Mexican

    North/North Central = urban/suburban....again...mostly black or Scots Irish roots along with Mexican....(Dallas)

    I wonder why Chosen that those Texas Germans didn't bring that barbecue to Germany?

    There should be an exchange....the Texas Germans should bring their BBQ to Germany and the folks in Germany can bring some of their lovely ladies to Dallas.

    I live in a relatively small town and they have a thing called 'Squealing on the Square' (I'm not sure who picked the name. I wasn't on that committee. lol) About 20 people or businesses come to town, and they set up and BBQ all night on the court square. Then they have a contest the next day to judge the BBQ and sell to people while the parade is going on...I was amazed at the people that come in to do it...Memphis, Kansas, North Carolina. Usually, someone from Memphis wins. One of the guys actually opened a restaurant here after coming. It's become a really big deal.....a national BBQ organization out of Kansas came last year to help judge and presented some sort of national award for BBQ.

    I prefer catfish. My parents live in the country and have a stocked pond with catfish and bass. It's a lot of fun fishing and going to feed them. They come right up to the bank, and you could probably just take a net and get them. They had some albino catfish that I enjoyed feeding. You just don't see them very often. I know that I'm considered a 'Girlie Girl' by most people but I do enjoy fishing...I didn't get rid of all the country in me when I moved to town. By the way, I don't think that you can enjoy a fish fry without hush puppies and hot sauce. :D

    The brisket that I had was very flavorful, but it just seemed like I was chewing alot. Of course, one of my friends didn't like it at all and when no one was looking, she kept putting hers on my plate because she didn't want to hurt our friend's feelings. I thought that it was growing on my plate. lol :p

    I'm not a big fan of sausage, but I love chicken just about any way that you can fix it.

    Shiet we fuck up the grille out here... WESTSIDE!

    Germany has good BBQ, not sure about the parties though. They are MEAT EATERS, anybody considering living there won't miss anything from their American diet trust me....

    I'm doing good...

    It's actually hard to measure if we really break it down because most American dishes come from somewhere else.

    True "American" food would probably be turkey, cranberries, pumpkin, corn....rather boring fare unless it's Thanksgiving

    "Squealing on the Square"....sounds painful.........for the pig :wink:

    Yeah BBQ beef in general can be an acquired taste....doesn't quite melt in your mouth unless the cook is really good.

    I haven't gone fishing since I was eight or nine.....but fishing where I live is probably only wise if you're doing it for sport because you might pull out a fish like this.....

    Well yea we do eat meat and got a lot of different kinds of meat especially for BBQ but the parties sukk really bad so I don't really enjoy BBQs here.Lol

    You do get a visual of pigs running wild on the square being chased by men with butcher knives. :D
