If the date doesn't go well and I'm sure that I don't want to see the guy again, I would feel bad to let him pay. I would insist on going dutch in that case. (Unless he behaves like an asshole, then I wouldn't feel bad to make him pay for my company LOL) But that's just me, guess other women are different.
Honestly this is why I like to keep it real casual in the beginning. I'd feel horrible with him spending that kind of money and we didn't really click. Agreed.

I guess I'm a cheap date then. I eat a little something before going out in case there's a wait (nothing sets a good first impression like passing out due to low blood sugars, ya know?), I don't need an appetizer, I choose a mid-priced entree (something more filling than a salad) and dessert is usually a pass (unless we agree to share something). And I don't drink alchohol or coffee. Oh, and I usually offer to lay the tip. And I typically know after one date (max 2) whether the guy is going to be a romantic interest or a friend only.
Dating is always going to be a gamble and that's why it sucks. First date is also first impression date. If the first impression that you want to make is picking the girl up in a dirty car blasting Flocka, wearing wrinkled clothes, unkempt hair and dinner at a cheap restaurant. Then don't be surprised that she stops responding to your calls and texts the next day. Many women these days are so used to shit ass dates that it only takes a little effort a little money and a bit of creativity to have a good date. As far as restaurants, it depends on the girl and what I know about her likes / dislikes. Some women prefer smaller local places that have 'character', some prefer big fancy restaurants, some just want to have a bottle of wine, some prefer a glass of wine on the beach.

A good tapas restaurant. The small portions give you a chance to try and share a bunch of different plates and keeps the conversation lively and moving.
